作为“中国厨师之乡”和“世界美食之都”的佛山市顺德区,其厨艺博大精深,其食肆星罗棋布,名菜美点如恒河沙数,岂能无诗歌之咏之,记之述之?顺德饮食文化研究者廖锡祥先生多年来专研顺德本土美食,溯其源起、探其典故、觅其制法,经多番考证、反复修改,凝练成一首首清新明快、内涵丰富的美食竹枝词,为大众了解顺德美食文化提供了一扇独特的窗口。

今在顺德各方的支持下,结集成书,并配上图片、注释、英文翻译,使之更具国际传播价值。本书共收录顺德美食竹枝词200首,分为名菜篇、小吃篇、宴席篇、食材篇、食俗篇、食府篇和食典篇七个部分,全面、立体地展现了顺德美食文化的内涵和魅力。

双皮奶

Double-layer Milk Custard

甘香嫩滑奶双皮,

玉液凝脂润雪肌。

寄语修容诸倩女,

醍醐可助养丰姿。

双皮奶是有上下两层奶皮的炖牛奶。所谓奶皮,是指经煮沸的牛奶表层奶脂冷凝而成的一层膜。奶皮又甘又滑,是炖牛奶的精华所在。因该小吃首创于大良,故称“大良双皮奶”。双皮奶是岭南小吃的龙头老大,仁信双皮奶被认定为“中华名小吃”。

This delectable, sweet treat is a milk-egg pudding with two layers of “nai pi”, also known as milk skin. “Nai pi” refers to the creamy skin that forms on the surface of simmering milk, which is the essence of this dessert. Originating from Daliang, it is also called Daliang double-layer milk custard. It has been rated as one of the Chinese Famous Snacks and is particularly famous in the Lingnan region of China.

岳母鸡

Yue Mu Chicken

庖厨七尺未为深,

战火燃眉仅一寻!

可敬调和抛镬手,

凭将刺字砺丹心。

为了激励中华儿女投身抗美援朝、保家卫国,大良桥珠酒家龙华师傅决定制作一款艺术菜,以古喻今,用以纪念民族英雄岳飞的贤母教子精忠报国的动人事迹,取名“岳母鸡”。此菜用金针(黄花菜的干制品)、云耳、正菜(一种大头菜)蒸鸡,菜中用金针象征岳飞母亲用针刺字,用云耳表示贤母的教诲在儿子耳边回响,用正菜赞美岳母忠诚正直的品质,可谓独具匠心。

In order to encourage the Chinese people to join the Great Movement to Resist America and Assist Korea, Chef Long Hua at Qiaozhu Restaurant made this patriotic dish. It was based on a touching story between a 12-century national hero Yue Fei, and his mother Yue Mu. In Chinese, “Mu” refers to someone’s mother. This dish is steamed chicken with dried lily flowers, wood ears and preserved kohlrabi. The golden, needle-like dried lily flowers signify the needle that Yue Mu used. Wood ears refer to the mother’s words echoing in Yue Fei’s ears. And the preserved kohlrabi(or zheng cai in Chinese), represents Yue Mu’s integrity(or zheng in Chinese).

龙船饭

Dragon Boat Feast

夺锦飞龙庆凯旋,

簪花赴宴气昂然。

开怀痛饮群英酒,

扒仔今时大过天!

吃龙船饭是顺德水乡端午节民俗中的一项盛事,是赛龙舟衍生出来的美食活动。吃龙船饭是为了祝捷,希冀能像龙一样威猛矫健。质朴、原味是其一贯特色,煮的是大锅饭,炒的是大锅菜,众人坐小矮凳,围方木桌,端粗碗,持竹筷。近年,龙船饭升格为龙舟宴,有的社区还把它办到酒楼中。

The Dragon Boat Festival is a traditional celebration that includes a feast known as the “dragon boat feast”, which aims to commemorate the victory and wish for dragon-like vitality. This festive meal is characterized by its rusticity and original flavors, with dishes cooked in large woks and diners sitting on small stools around square wooden tables and eating with coarse bowls and bamboo chopsticks. Some communities have started holding the feast in restaurants recently.
